Vegemania: Part Un (Artichokes)

I’ve been researching and experimenting with different veggies and tasty recipes to try at home, in an effort to eat out less, using a vegetable as the star entree.  Artichokes are in season now, so last night I steamed them with lemon and garlic, and made a simple, yet delicious dipping sauce with Veganase, balsamic, lemon, and a pinch of cayenne.  Here are some of the inspiration recipes I found for steamed artichokes and complementary dipping sauces:

Steamed Artichoke Ideas:

Saffron, white vinegar, parsley

Lemon, bay leaf, garlic

Parsley, garlic, lemon, white wine, bay leaf

Dipping Sauce Ideas:

Lemon Butter

Walnuts, Sherry Vinegar, Dijon, Garlic

Worcestershire, sesame oil, honey, lemon

Capers, Shallots, Parsley

Balsamic, basil, garlic

Lemon, Garlic, Dijon

  1. I was just talking to my fiancé about cooking up an artichoke one of these days. Fresh artichokes are so much better than the jarred kind. Thanks for sharing! 🙂
